Both of these phones work with Android OS (Operating System), but the Galaxy S21 has 11 version while Motorola Edge 30 has Android 12 version.
The Samsung Galaxy S21 has an incredibly better looking display than Motorola Edge 30, because although it has a quite smaller screen, and they both have an equal 1080 x 2400 resolution, the Samsung Galaxy S21 also counts with a bit higher display pixels density. The Galaxy S21 counts with as much storage capacity to install games and applications as the Motorola Edge 30, both of them have exactly the same internal memory.
Galaxy S21 features a much better performing processing unit than Motorola Edge 30. They have 8 cores and the same RAM amount.
