OnePlus 7 captures a lot better videos and photos than Galaxy S7, and although they both have the same (4K) video definition and a F1.7 diafragm aperture, the OnePlus 7 also has better 60 fps video frame rate, a back-facing camera with a way higher resolution and a larger back camera sensor providing a higher image quality.
