Although Galaxy S20 Ultra 5G is a better device, it is a lot more expensive than Galaxy S8, and it doesn't have such a good price and quality relation as the Galaxy S8. So if you want that extra specs, you can buy Galaxy S20 Ultra 5G, else you can save some money and get the Galaxy S8, resigning a couple features and specs.
