Samsung Galaxy S21 Ultra has a score of 98.1, which is a lot better than the Galaxy S5 Plus's global score of 78.1. These devices use Android OS (Operating System), but Samsung Galaxy S21 Ultra has the older 11 version and Galaxy S5 Plus has Android 4.4.2. Even though Samsung Galaxy S21 Ultra is way newer than Galaxy S5 Plus, it is a little thicker and heavier.
The Samsung Galaxy S21 Ultra has just a bit better looking display than Galaxy S5 Plus, because it has a way better 1440 x 3200px resolution, a quite higher count of pixels per inch of display and a much larger display. Galaxy S21 Ultra has a little better hardware performance than Samsung Galaxy S5 Plus, because although it has doesn't have an additional graphics processor, it also counts with a greater amount of RAM memory and a greater number of cores (and faster).
The Galaxy S21 Ultra takes greater videos and photos than Samsung Galaxy S5 Plus, because it has a larger diafragm aperture to take better captures in low-light situations, a lot larger sensor taking more light and vivid colors, a way better resolution back-facing camera and a way better 7680x4320 video resolution.

Galaxy S21 Ultra costs a lot more than Galaxy S5 Plus, but it's still a great choice, because you can get a lot more for that extra money.
