Sony Xperia 5 III is just a bit better than Galaxy Z Flip 3, getting a 90.5 score against 85.6. These phones use the same Android 11 OS (operating system), so you shouldn't see any differences regarding operating system features. Although the Sony Xperia 5 III and the Galaxy Z Flip 3 were only released 4 months apart, Sony Xperia 5 III's body is a bit lighter but somewhat thicker than the Galaxy Z Flip 3.
