The Samsung Galaxy Z Fold 3 has a global score of 90.6, which is a little bit better than Motorola Edge (2021)'s general score of 84.6. Although Samsung Galaxy Z Fold 3 and the Motorola Edge (2021) were released with only a couple of months difference, the Samsung Galaxy Z Fold 3 construction is a lot heavier but noticeably thinner than the Motorola Edge (2021). Both of these devices come with the same Android 11 operating system, so you shouldn't notice any difference regarding that.
Galaxy Z Fold 3 has a little better performance than Motorola Edge (2021), and although they both have the same number of cores, the Galaxy Z Fold 3 also has a greater amount of RAM memory.
