Even though the Sony Xperia 1 III and Samsung Galaxy Z Fold 3 were only released with a couple months difference, the Sony Xperia 1 III body is incredibly lighter but notably thicker than Samsung Galaxy Z Fold 3. Both phones in this review use the same Android 11 OS (Operating System), so you shouldn't see any differences in that aspect.
Samsung Galaxy Z Fold 3 counts with a CPU that's just as good as Sony Xperia 1 III's CPU, they have the same number of cores and a 12 GB RAM memory. Xperia 1 III has a better looking screen than Galaxy Z Fold 3, because although it has a little smaller display, it also counts with a better 1644 x 3840px resolution and a lot more pixels per screen inch.
Sony Xperia 1 III has a much greater storage capacity to install applications and games or saving photos and videos than Galaxy Z Fold 3, and although they both have the same 256 GB internal storage, the Sony Xperia 1 III also has an external SD slot that admits a maximum of 1 TB. Xperia 1 III has a little longer battery lifetime than Samsung Galaxy Z Fold 3, because it has a 4500mAh battery size.
The Xperia 1 III counts with a greater camera than Samsung Galaxy Z Fold 3, and although they both have a 12 mega pixels camera in the back, the Xperia 1 III also has a lot larger diafragm aperture to take better low-light images.
